Ingredients:
- 1 (8 ounce) package whole wheat linguini pasta
- 1 tablespoon olive oil
- 1/2 pound chicken, cut into small pieces
- 1/2 pound fresh mushrooms, sliced
- 1/2 pound fresh broccoli
- 6 tablespoons butter
- 2 cloves garlic, minced
- 1 (3 ounce) package cream cheese
- 2 tablespoons chopped fresh parsley
- 3/4 teaspoon dried basil
- 1/2 cup boiling water
- 1/4 white wine
Directions:
In a medium sauce pan, melt butter with the minced garlic. Stir in the cream cheese, breaking it up with a spoon as it melts. Stir in the parsley and basil. Simmer for 5 minutes. Mix in boiling water until sauce is smooth and just starts to thicken. Stir in the white wine.
While your sauce is cooking, heat 2 tablespoons olive in a large skillet over medium-high heat. Add chicken, mushrooms and broccoli; cook and stir until tender. Toss cooked pasta into the skillet. Add the sauce and stir. It's ready to serve.
