ASIAN CHICKEN SALAD WITH SESAME GINGER DRESSING

Ingredients for salad:
  • 1 head heart of romaine, chopped
  • 1 cup shredded broccoli slaw mix
  • 1 cup coarsely shredded cabbage
  • 2 stalks celery, cut on a bias
  • 1 carrot, cut into matchstick pieces
  • 1/2 red bell pepper sliced into thin strips
  • 1/2 cup of edamame, shelled
  • 1/2 cup slivered almonds
  • 1 small can mandarin oranges in their own juice, drained
  • 2 small or 1 large chicken breast, poached and cubed
  • Chow mien noodles for topping
Ingredients for dressing:
  • 2 cloves garlic, crushed
  • 1 tablespoon fresh grated ginger root
  • 1/4 cup olive oil
  • 2 tablespoons sesame oil
  • 3 tablespoons rice vinegar
  • 1/4 cup naturally brewed soy sauce
  • 1/4 cup honey
  • 2 tablespoons water
  • 2 tablespoons sesame seeds
Directions for salad:

Combine all ingredients except mandarin oranges, chicken and chow mien noodles and toss together.  Place salad mixture on plate and top with remaining ingredients.

Direction for dressing:

Combine all ingredients except sesame seeds.  Microwave for 30 seconds and mix with blender.  Add sesame seeds and chill before serving.
